A brine rapid freezing device freezes food very quickly using a brine solution cooled by a freezing unit. It is an immersion-type device that directly submerges the product in the liquid and is effective in maintaining quality through rapid freezing.

Sodium chloride and similar substances are used as the brine solution. It maintains a low temperature of −21°C to −22°C and rapidly freezes the food to the core, minimizing tissue damage. This device is used as a pre-freezing stage prior to the air blast freezing tunnel process.
